First dish - Pesto chicken with gnocchi and salad.
Spread pesto sauce on the chicken, top it with mozzarella cheese and tomato slices, then bake.

Second dish - Sweet & Tangy chicken (John's favorite) with gnocchi and fried green beans and carrots.
Rub chicken with chipotle spice, smokey BBQ spice, salt & pepper, put in baking dish.
Mix equal portions Heinz 57 sauce with honey and add to dish, coat chicken. Top with pineapple and bake.

Dish is also good with sweet potato.

If you want to try gnocchi but don't want to spend $5+ a pack at the grocer, they have it at dollar tree for $1.

Tonight I am making steak with peanut sauce. Not sure if I am going to make the sauce myself using my classic recipe, or if I'll just buy the sauce pre-made.

The recipe consists of 5 ingredients: peanut butter, fish sauce, lemon juice, chili paste, and milk. You can also use tahini instead of peanut butter. You'll need extra milk for when you re-heat the leftovers, if you have any.

I'll have to send you a PM later. I looked all through the grocery store just now and couldn't find gnocchi. I did change things up a bit too, but tonight is still a "Bug Out Girl" inspired dinner :)

If society fell apart, we - the people would build a new one. Most people are good at their core, and when we see things that are wrong we work to fix them together. Make friends with your neighbors, get involved with your community - because we will rebuild our lives, our communities, from horrible circumstances we always will.

I remember the teenage years with my son, awful they were, so unbelievably stubborn. I wouldn't ever wish to go through that again. At least you are taller than me, that should help. Teenage years they definitely require a man to reign them in and give them a man to man talk.

I had a meal planned out for the weekend, and a dish to get us through part of the week, but changed my mind when I remembered my great gardener pulled out a plethora of potatoes, and I get home tonight and see a basket of tomatoes (some small breed, purple/green-ish)...and I changed my mind.

Tomorrow, I will be making a frittata with the potatoes and tomatoes. That 4 Italian cheese mix at the store and I'm not sure what else. I want to keep the flavors simple.

Maybe make a soup to get us through the first part of the week...not sure. 1dunno1

How did I do?

By the way, I typically don't take photos of my food  Chuckle

And I rarely use parsley, but I thought my daughter would appreciate it!
