I would like to know how to make really soft pita bread. Mine is always too firm. Anyone have any tips?

Just made some on Tuesday. The hardest part is rolling them the right thick/thinness and keepi g them round round.

Could I use coconut oil instead of lard? Anybody know? I would like to try making some of these to go with some carne asada I will be grilling tomorrow or Saturday.
