Eggs are good. But fuck eggs. They are a piss off to work with. However, a couple of them freshly cracked, over medium well just so the yolks are becoming gooey. That is heavenly. especially with buttered, sourdough toast to mop up the yolks. Throw in a some bacon and link sausage along with hash browns or country potatoes.

Well it's that time again... peeling eggs for deviled eggs. I did an experiment this time.

Bought Egg Lands best eggs with the little stamp on the shell and fancy clear plastic container and bought the generic looking eggs that come in the cheap Styrofoam container.

Boiled the same amount of eggs each in the same pot.

Results.. Egg Lands best eggs peeled terribly and the generic brand peeled like a champ.

I had this same problem last time I used Egg Lands best eggs. Luckily I was prepared and didn't have a egg meltdown. No eggs were chucked across the room for the dogs to clean up. Chuckle

This little experiment tells me that Egg Lands best eggs are fresher than the generic brand eggs.

Anyhow, instead of making the usual jalapeno, cheddar and bacon deviled eggs. I put some Wickles Pickles in the food processor and added those to the filling. I must say, they turned out very tasty. Yeah3

The ugly Egg Lands best eggs will stay home for us to eat, the generic pretty ones go to Thanksgiving dinner tomorrow.

I disagree with your methods..
Cold water and cold raw eggs in the pan. Salt liberally, and add a dash of baking soda.
Bring to a hard boil then simmer low for 15 min.
Cold water dousing immediately and crush up the outer shells gently, but to smithereens.
Peel, don't wait, under cold running water.
I would scramble your eggs, roadglide..
